Dad’s Super Simple Quinoa Breakfast Bowl
I don’t know about you but breakfast gets boring! I seem to eat the same three things every morning. It monotonous! Ive been looking for something that’s fast, easy, and fills me up. Dare I say I think Ive found it!
Back in October my wife an I went for breakfast for our anniversary.
I was sick of the same old same old and was feeling adventurous. We were at this fantastic little hole in the wall place that seemed to specialize in healthy hearty breakfasts. I chose the Quinoa breakfast bowl. It was filling, healthy, and freakin’ delicious!!! And there are so many ways you can prepare this! Below is my recipe for the one I like the best but feel free to make it your own. You can even do a sweet version like you would with oatmeal.
I been working this into the breakfast menu for a few weeks now ad still enjoying it! So here it is the recipe for Dad’s Super Simple Quinoa Breakfast Bowl!!
Cook some quinoa to the package directions. I often use the pressure cooker so its very quick OR cook it the night before.
Chop up 2 mushrooms, 1/2 a pepper (any kind), 1/4 of an onion
Cook until soft (about 6 minutes)
Top it with 2 fried eggs! When you cut into the soft yolks it makes a bit of a sauce. Absolutely fantastic!

fell free to add whatever makes sense to you. Ive had it with beans and sweet potatoes as well but this combo is my favorite. I hope you like it!
