Chop up cabbage and throw it in a bowl add 1 tbsp of kosher salt
Mix for 20 minutes…its worth it.
Add caraway if you want.
Add a simple brine 1 tsp of salt to 1 cup of water.
Cover with cabage leaves and cling film.
weigh it down so it stays submerged. its fermenting afterall.
cover with a towel.
after te days stuff into a clean jar with a lid (as this is fermented the lid wont seal like with other canning)
