Dad’s Super Simple Chicken Stock.

I don’t know about you but it seems crazy to me to throw away our roast Chicken carcasses and then go out and buy Chicken stock. So in true Happy Dadding fashion I’ve started making my own! For this installment of Stuff To Eat I give you Dad’s Super Simple Chicken Stock. Freeze this stock in Ziploc containers and pull it out for soups, sauces, and risotto. So here it is: Dad’s Super Simple Chicken Stock.

I save up about 6 chickens in a Rubbermaid reusable container in the freezer. I also save all those wilted, pathetic, left over celery and carrots that inevitably end up in your crisper. I throw those into a bread bag then into the freezer so they’re ready when we make stock.

The Recipe

Put all of the chickens and left over veg into a big pot on the stove. I use my turkey fryer pot but any big pot you have will work fine. You can make smaller batches if you need to.

I keep it simple with celery and carrots but you can add anything you like. Garlic, peppercorns, bay leaf, and even lemons are great additions.

Fill the pot with water, place it on the stove and turn on to high heat.

Once it boils turn down to simmer for about 4 hours.

Let it cool for a few hours

Strain into Ziploc reusable containers

Collect and freeze the left over meat. We get enough to make 2 chicken pot pies! Or you can toss a handful of the left over flesh into soups, pasta whatever!
